Just a suggestion about stripping a SaaS MVP and doing customer research at the same time.
All business tasks that the software would eventually do automatically (creation of accounts, notifications, alerts, updates, flows, settings, etc) can be done manually. Just create simple forms and send emails to you when such actions are needed, then do them manually.
Also, not having a lot of forms validation is a good idea at this point, as you’ll want to see what people actually want to enter in those fields for later UI/UX fine tuning.

Alex, very nice. Your list of business that inspire is very similar to the one I have — I’d add Uber, Asana, Instacart and Dropbox to that list.
